Preparation time- 5-10 minutes, plus standing time.

Ingredients

  • 3 tablespoons light soy sauce
  • 1 tablespoon sesame oil
  • 1-2 red chillies
  • 1 clove garlic
  • 2 cm piece of ginger root

Method

  1. In a small bowl, lightly whisk the light soy sauce and sesame oil together.
  2. Finely slice the red chilli, peel and finely grate the garlic and ginger. Mix the chilli, garlic and ginger in to the soy and sesame mixture.
  3. Allow the flavours to infuse for 10-15 minutes before serving.
